Marisa Mauro created Ploughgate Creamery in Spring of 2008 after nearly a decade of working alongside Vermont's best farmstead cheesemakers.  Her vision is to evoke a time past, when families worked with their animals to create bounty from a verdant mountain landscape.  The rich aromas and flavors of her handmade cheese truly quality such efforts.

Hartwell gets its name from the quiet pond near Ploughgate's creamery space in Albany, Vermont.  Fresh Ayrshire breed milk is sourced from a neighboring farmer, to whom Marisa pays double the going rate of milk; she believes in honoring the true value of her exceptional raw material in a sagging commodity market.  This incentive also rewards the higher standard of quality necessary for artisan cheese-milk.

As a small-format, soft-ripened cheese with a delicate bloomy rind, Hartwell is perfect for a picnic or everyday family meal.  Its appearance and fresh mushroom aroma are similar to French Camembert, but the approachable flavor is more grassy ad delicate.  At room temperature, the loosened texture shines of cultured butter while floral, herbal notes linger.  Pair with mellow white ale or lean gewurztraminer.
